Layers of crisp bacon, fresh avocado and a spicy chipotle sauce are just a few of the things that make this wrap a go to meal around my house. It is great in a pinch when you get home late and don't know what to do for dinner. Wonderful paired with soup or your favorite chips. This can be a lite snack or main course depending on how you dress it up. Sliced into small pieces it can even be the center piece for your next bento box. The secret to this wrap is the chipotle sauce, it is spicy, cool and has people asking, what is that spicy flavor? For the sauce you need one cup of mayo and one cup of sour cream, two to three tablespoons of Chipolte Tabasco, and 2 cloves of garlic. If you have microplane finely grate the garlic into the sauce. This allows the full flavor of the garlic to come through and also won't leave a gritty texture from diced garlic. I've tried this both ways, with a mircoplane and without and there is a huge difference in flavor. The microplane breaks down the garlic and allows the juice to go into the sauce and the flavor is much more intense. I use my microplane just about every day in the kitchen. The sauce will stay fresh in an air tight container in the fridge for up to two week, however I doubt it will last that long. To assemble the wrap just place some sauce on the wrap, add your crisp bacon, tomatoes, romaine lettuce, and avocado. Roll the wrap and cut on a bias. If you aren't serving it right away brush your avocado with fresh lime juice to slow down the oxidation process. Lemon and lime juice can be used on many fruits and vegetables to keep them from turning brown. Lemon works the best , however the Latina in me loves the pairing of lime and avocado. To make this meal more hardy add smoked gouda or fresh deli turkey. (or both) Serve with extra chipotle sauce for dipping.
